Sweet Potato Bites Two Ways
Roasted sweet potato rounds topped with yummy toppings make for the easiest appetizer recipe ever!

- 2 medium sweet potatoes sliced into 1/4 inch rounds
- 2 tsp olive oil
- 1 medium pear thinly sliced
- 4 oz goat cheese log or wedge
- 1 tbsp honey
- 1 medium avocado mashed
- 6 cherry tomatoes sliced
- 1/2 tsp salt
Preheat oven to 400 degrees F
Arrange rounds in single layer on large baking sheet, drizzle with olive oil. Roast for 10 minutes, flip, and roast for another 10 minutes.
Assemble each version and serve immediately.
