Lime Popsicles with Coconut

All you need is a handful of simple ingredients, a blender, and a popsicle mold to make refreshing and easy popsicles at home! Blending in spinach and lime yogurt gives these popsicles extra color, flavor, and nutrition.

Equipment

Ingredients

  • 1 cup coconut milk (or any plain/vanilla milk of choice)
  • 10.6 oz lime yogurt (2 individual-sized cups)
  • 4 tbsp fresh lime juice
  • zest of 1 lime
  • 1 scoop vanilla protein powder (I would recommend whey protein)
  • 2 cups spinach
  • 2 tbsp shredded coconut unsweetened

Instructions

  • Blend all ingredients (except shredded coconut) in a blender until thoroughly blended and smooth.
  • Pour the mixture into popsicle molds (don't add sticks yet). Freeze for 1 hour, then insert popsicle sticks and add a sprinkle of shredded coconut to each popsicle. Freeze for at least 8 hours or overnight.
  • To remove popsicles from the molds, you can run warm water over the outside of the molds before gently removing them. Optional - for some extra pizazz, sprinkle a little bit of extra shredded coconut around the bottom of each popsicle and press gently to make it stick.
