Caramel Apple Halloween Trail Mix

Ingredients

  • 4 cups popcorn popped
  • 2 cups cinnamon cereal (I used Kashi GO Crunch)
  • 2 cups dried apple rings
  • cup caramel bits
  • 1 tsp water

Toasted Cinnamon Pecans

  • 2 cups raw pecans
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 tbsp canola oil

Instructions

  • Prepare the toasted cinnamon pecans. Preheat oven to 250°F. Combine nuts, cinnamon, salt, and oil in a medium bowl and stir to coat. Spread on a baking sheet and toast for 1 hour.
  • Meanwhile, gather the rest of the ingredients. If you would like to make homemade popcorn from kernels, do this now. 2 tablespoons of kernels should yield about 4 cups of popped popcorn.
  • Once the pecans are toasted, spread the popcorn, cereal, pecans, and apples on a baking sheet.
  • Melt the caramel. combine 1/3 cup caramel bits and 1 tsp water in a microwave-safe bowl. Microwave for 30 seconds and stir until smooth. Drizzle in thin ribbons over the ingredients on the baking sheet. Allow the mix to cool for 30 minutes so that the caramel can harden.
  • Pour into a bowl and enjoy!

Notes

  • You can use storebought popped popcorn or homemade plain air-popped popcorn
  • It's hard to wait for this mix to cool before digging in, but letting the caramel cool completely will prevent the mix from being too sticky.
