Sweet Potato Bites Two Ways

Roasted sweet potato rounds topped with yummy toppings make for the easiest appetizer recipe ever!

Equipment

Ingredients

  • 2 medium sweet potatoes sliced into 1/4 inch rounds
  • 2 tsp olive oil
  • 1 medium pear thinly sliced
  • 4 oz goat cheese log or wedge
  • 1 tbsp honey
  • 1 medium avocado mashed
  • 6 cherry tomatoes sliced
  • 1/2 tsp salt

Instructions

  • Preheat oven to 400 degrees F
  • Arrange rounds in single layer on large baking sheet, drizzle with olive oil. Roast for 10 minutes, flip, and roast for another 10 minutes.
  • Assemble each version and serve immediately.

Sweet Version

  • Top half of sweet potato rounds with a spoonful of goat cheese, pear slices, and a drizzle of honey.

Savory Version

  • Top the other half of the sweet potato rounds with a spoonful of mashed avocado, tomato slices, and salt to taste.

Notes

  • 1 serving = 2 rounds (1 sweet, 1 savory)
  • This recipe won't keep well as leftovers, so eat within 4 hours of serving
